Collecting on broken contract

In May of 2007 I recieved a deposit check of $1500 from an individual who wanted to rent my home starting June 1.  The document she and I signed stated that the funds acted as a HOLD on the property but if the remaining deposit  and first month rent were not paid by June 1 then I would keep the $1500 and find a different renter.   The $1500 check was returned non sufficient funds and I have some email conversation where this individual apologizes and states that she will pay me the $1500 since that is what she agreed to.  I have yet to see anything else from her, what should I do at this point?

I now live in FL, if I choose to take her to small claims do I have to file in Utah?  Do I have to be there personally or can I send someone to represent me such as a family member?
